Flour bought in stores has been stripped of all the goodness contained in the wheat germ. This is done to extend shelf life, as the Vitamin E oils contained in the wheat germ can go rancid. You are then left only with the endosperm (white flour), which only contains the starch and protein or, in the case of whole wheat, the bran is added back in. Most store bought flour is also bleached and/or fortified. As soon as flour is milled, it begins to lose its nutritional value.  This is why we have a stone mill and use our flour directly after milling. This freshly milled organic whole grain contains 40 of the 45 nutrients needed to sustain healthy living. We do realize that most families don’t have access to a home mill, so we mill the flour fresh on demand and put it directly into the freezer, encouraging our customers to do the same once they get home. This way, the nutrients are preserved for about a month. Unfortunately, due to oxidation and degradation of nutrients, we don’t offer this option for customers who make use of couriers. We only supply to our local customers. We source our grains from an organic farm certified by ECOCERT, meaning that no GMOs are allowed on the fields 3 years before an organic crop is planted and no glyphosate is sprayed on the wheat to desiccate it. All wheat in South Africa is currently non-GMO. The wheat is also not stored with phostoxin; they use food-grade diatomaceous earth to deter weevils. Most people who are gluten intolerant can tolerate freshly milled organic whole grain flour.
